Dairy-Free Lemon Blueberry Frozen Yogurt Bark

A bright, kid-friendly summer snack made with dairy-free yogurt, fresh lemon, and blueberries.

Some flavors just feel like summer, and lemon is one of them.

It is bright, fresh, sweet-tart, and somehow makes even a simple snack feel a little special. Since my daughter loves lemon, I wanted to make something easy, dairy-free, and kid-friendly that felt refreshing without requiring the oven.

This dairy-free lemon blueberry frozen yogurt bark is a simple summer snack made with dairy-free yogurt, fresh lemon juice, lemon zest, and blueberries. It comes together quickly, freezes into snackable pieces, and works as both a light dessert and an afternoon treat.

It is also the kind of recipe kids can help with — stirring, sprinkling, spreading, and, of course, taste-testing.

Why we love this recipe

This recipe is simple, but that is part of what makes it work.

It is cool and refreshing for warm days, easy to customize, and sweet enough to feel like a treat without being complicated. The lemon gives it a bright flavor, while the blueberries add color and a little natural sweetness.

It is also a great reminder that dairy-free snacks do not have to be boring. Sometimes all you need is a good dairy-free base, a little fruit, and a freezer.

Ingredients

  • 2 cups dairy-free vanilla yogurt
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 to 2 tablespoons maple syrup or agave, optional
  • ½ cup blueberries
  • 2 tablespoons dairy-free granola, crushed graham crackers, or tiny sprinkles, optional

Instructions

Line a small baking sheet or freezer-safe tray with parchment paper.

In a bowl, stir together the dairy-free yogurt, lemon juice, lemon zest, and maple syrup or agave if using.

Taste the mixture and adjust the sweetness if needed. If your yogurt is already sweetened, you may not need much extra sweetener.

Spread the yogurt mixture onto the parchment-lined tray in an even layer. Try not to spread it too thin, or the bark may break into very small pieces.

Sprinkle the blueberries over the top.

Add dairy-free granola, crushed graham crackers, or tiny sprinkles if you want a little extra texture or color.

Place the tray in the freezer for at least 3 to 4 hours, or until completely firm.

Once frozen, break or cut the bark into pieces.

Serve right away and store any leftovers in a freezer-safe container.

Kid-friendly kitchen helper ideas

This is a great recipe for little helpers because there are several easy steps kids can do.

They can:

  • Stir the yogurt and lemon mixture
  • Sprinkle the blueberries
  • Add toppings
  • Help break the frozen bark into pieces
  • Taste-test, obviously

The bark does not need to look perfect. In fact, the uneven pieces are part of the fun.

Dairy-free note

Use a dairy-free yogurt that works for your family. Coconut, almond, oat, and soy-based yogurts can all work, depending on your preferences and allergy needs.

As always, check the labels on the yogurt, granola, graham crackers, sprinkles, and any toppings you use. Dairy-free products can vary by brand, and ingredients can change.

Easy variations

You can keep this recipe simple or change it based on what you have.

Try:

Lemon strawberry bark with sliced strawberries instead of blueberries.

Lemon raspberry bark for a more tart flavor.

Lemon sprinkle bark with tiny sprinkles for a birthday-style treat.

Lemon granola bark for more crunch.

Extra lemony bark with a little more lemon zest mixed into the yogurt.

Mom coffee moment

While the bark freezes, this is a good time for a quiet iced coffee moment.

A simple iced coffee with almond milk and a little agave pairs nicely with the bright lemon flavor. Nothing fancy — just a small pause while the freezer does the work.

Final thoughts

This dairy-free lemon blueberry frozen yogurt bark is simple, bright, and easy enough for a summer afternoon.

It is the kind of snack that feels fun for kids and still practical for real life. No oven, no complicated steps, and no need to make dairy-free living feel harder than it has to be.

Just lemon, blueberries, dairy-free yogurt, and a little freezer magic.

Rita

Easy Dairy-Free Red, White & Blue Cupcakes for the Fourth of July

A simple boxed cake mix shortcut with homemade dairy-free icing and kid-friendly decorating.

There’s something about the Fourth of July that makes kids want sprinkles, frosting, and something fun from the kitchen.

So when my daughter asked if we could make a Fourth of July cake, I did what moms do: I checked what we already had, looked at the time I had available, and turned the idea into something simple.

This batch started with a boxed cake mix shortcut, homemade dairy-free icing, and red, white, and blue sprinkles waiting for little hands to decorate.

This space is not about making everything complicated. It is about making dairy-free living feel doable, joyful, and real.

A shortcut that still feels special

I originally thought about making these completely from scratch, but real life had other plans — and that feels fitting for our very first recipe post.

For this batch, I used a dairy-free boxed cake mix as a shortcut and made sure the rest of the process stayed dairy-free. The icing is homemade, the decorating will be kid-led, and the memory is still just as sweet.

That is part of what I want Mommy & Me Dairy-Free to be: honest, doable, and flexible for real family life.

Sometimes you make the cupcakes from scratch.

Sometimes you use the box mix.

Either way, you can still make something sweet, festive, and dairy-free.

Ingredients

For the cupcakes

  • 1 box dairy-free cake mix, double-checked for dairy-free ingredients
  • egg whites, oil, and water according to the box directions
  • Cupcake liners

For the homemade dairy-free icing

  • 2 cups powdered sugar
  • ¼ cup dairy-free butter, softened
  • 1–2 tablespoons dairy-free milk
  • ½ teaspoon vanilla extract, optional
  • Pinch of salt, optional

For decorating

  • Red, white, and blue sprinkles
  • Optional: decorating sugar or extra festive toppings

Instructions

Prepare the dairy-free boxed cake mix according to the package directions, using dairy-free ingredients for anything you add.

Line a muffin pan with cupcake liners.

Fill each cupcake liner about two-thirds full.

Bake according to the cupcake instructions on the box, or until a toothpick inserted in the center comes out clean.

Let the cupcakes cool completely before decorating.

While the cupcakes cool, make the icing. Beat the dairy-free butter until smooth. Add the powdered sugar, dairy-free milk, vanilla if using, and a small pinch of salt. Mix until creamy.

If the icing is too thick, add a little more dairy-free milk. If it is too thin, add a little more powdered sugar.

Once the cupcakes are completely cool, frost them and decorate with red, white, and blue sprinkles.

Kid-friendly decorating idea

This is the fun part.

Set the cooled cupcakes on a tray and create a small decorating station with the frosting and sprinkles. Let the kids decorate their own cupcakes, even if the sprinkles land everywhere except where you expected.

You can use:

  • A small bowl of red sprinkles
  • A small bowl of blue sprinkles
  • A bowl of mixed patriotic sprinkles
  • A spoon for each bowl

This keeps little hands out of the main sprinkle containers and turns dessert into an activity.

Dairy-free note

Always check the labels on your cake mix, frosting ingredients, and sprinkles.

Some boxed cake mixes are dairy-free, but not all of them are. Some sprinkles and decorating candies may also contain dairy or be processed around allergens, so check carefully if allergies are a concern.

The goal is not to assume. The goal is to read the label and choose what works for your family.

Final thoughts

These cupcakes are simple, but that is exactly why I love them for our first recipe post.

They are festive without being stressful.

They are dairy-free without feeling complicated.

And they started with a real mom moment: a child asking to make something fun for the holiday and a mom deciding to make it work with what was already in the kitchen.

Happy Fourth of July from our kitchen to yours.

With love,
Rita
